Da Michele, a storied Neapolitan pizzeria dating back to 1870, now has a shop in Fukuoka, its third after Naples and Tokyo. Master pizzaiolo Leo, who was trained at the Naples shop, uses the same type of pizza oven and the same ingredients used at the original shop. (The cheese is flown in twice a week from Italy!) Only two kinds of pies are served, margherita and marinara, and they are to be eaten with a knife and fork in true Naples style. The vaulted ceiling adds to the atmosphere, but balcony seats are also available if you wish to dine al fresco.
