A new specialty bakery using organic wheat from Kyushu, Hokkaido, and the United States opened in Itoshima on March 20. Tomohiro Okuzoe from Amakusa, Kumamoto bakes simple artisan bread including Country, Baguette, and Rustic using slow fermentation. He developed his recipes after discovering the joy of traditional French bread with his partner Tina from California. Since so few ingredients are few, their quality is of the utmost importance. Tomohiro uses only wheat from growers he knows, a mill he trusts, and a selected salt and water. Eventually, the couple plans to sell by order only, but now you can purchase bread directly at the bakery. Check their Instagram page before going.
