After a <a href=\"https:\/\/www.fukuoka-now.com\/en\/ilpalazzo\/\">major two-year renovation<\/a>, IL PALAZZO\u2014Japan\u2019s first design hotel, originally opened in 1989\u2014has reemerged with a bold new look. Chef Tomio Sasao builds a full-course dinner based on what\u2019s freshest that day. The champagne. <strong>POL ROGER<\/strong> Brut R\u00e9serve\u2014classic, crisp, and generously poured throughout the night. Made only in exceptional years and aged over 11 years in bottle, it\u2019s not cheap (\u00a588,000), but for collectors or celebrators, it\u2019s there.<\/p>\n<p>This isn\u2019t a buffet or a tasting menu with name tags and explanations. There\u2019s a sense of spontaneity here that we enjoyed\u2014the chef cooks, the wine flows, and the night just unfolds.<br \/>\nSeats are limited (only five groups per night), and you\u2019ll need to book at least a day in advance.
