The brewery is known for its traditional \u201cHaneki-shibori\u201d pressing method, passed down since the Edo period, which uses a lever system to slowly press sake by hand. This technique is valued for producing a softer, more nuanced flavor than mechanical pressing.<\/p>\n<p>Its flagship label is Tanaka Rokujugo, a junmai sake milled to 65%, with a balanced profile that has earned a loyal following in Japan and overseas. During the brewery opening, visitors can purchase and sample limited-edition sake, including freshly pressed varieties available only at this time of year. Food stalls featuring local specialties such as Itoshima oysters and mentaiko add to the festive atmosphere.
