Osamu Shiroto, owner of the popular Najimatei restaurant in Higashi-ku, and Shigemi Kawahara, owner of the 100-shop Ippudo chain, will serve up a \u201ccollaborative\u201d ramen based on the Nagahama Champon from Nagahama Ichiban, a now-shuttered ramen shop where both of chefs learned their trade over two decades ago. The new dish is a combination of Najimatei\u2019s rich tonkotsu soup and Ippudo\u2019s al dente noodles, and the base sauce is a blend of both shop\u2019s recipes.
