In true Fukuoka style, your meal starts with a plate of cabbage lightly seasoned with a vinegary sauce. The roughly 20 skewers include <em>tsukune<\/em>(chicken meatballs), <em>negima<\/em> (chicken thigh and welsh onion), and <em>sasami<\/em> (fresh chicken tenderloin), all flavored with natural salt. For spice, add <em>shichimi<\/em> as you like. Another popular item is the pancetta-wrapped cherry tomatoes coated in basil sauce.
