The appeal lies not in presenting unusual dishes, but in preparing familiar flavours with exceptional care and arranging them beautifully.

The special experience of clay-pot rice

In Japan, rice is not simply an accompaniment. It sits at the heart of the meal.
Cooking rice in a donabe clay pot requires close attention to the heat, followed by time for the rice to steam and settle. The thick earthenware pot distributes the heat slowly, allowing each grain to become plump and distinct while drawing out the rice’s natural sweetness and aroma.

More than simply a way of producing delicious rice, it can evoke memories of someone taking the time to prepare a meal with care. The presence of clay-pot rice alone can make an everyday meal feel special.

Here, the lid is lifted near the table, releasing the steam and aroma in front of the guests. Anticipating that moment is part of the pleasure of the breakfast.

The centrepiece is the freshly prepared mentaiko. Placed on hot rice, its savoury saltiness and rich umami bring out the rice’s gentle sweetness. It is a deeply familiar combination for people in Fukuoka, but tasting it in such a carefully prepared setting offers a renewed appreciation of how naturally the two belong together.

Opening everyday flavours to the world

For international guests, mentaiko is often one of the first foods they encounter as a Fukuoka speciality. Buying it packaged as a souvenir, however, does not necessarily reveal how it is eaten at home or what other dishes usually accompany it.

Here, guests can experience something closer to a Hakata breakfast table by enjoying mentaiko with rice, miso soup, grilled fish and seasonal side dishes. For people who live in Fukuoka, it is an opportunity to rediscover familiar flavours in a setting removed from their everyday routine.

The Sea Bream Chazuke Set replaces the grilled fish, dried horse mackerel from Shikanoshima, with salmon and salmon roe, and adds sea bream dressed with sesame. Guests grind the sesame themselves, place the sea bream over the rice and finish by pouring warm dashi broth on top. The flavours change as the meal progresses, allowing even diners unfamiliar with Japanese food culture to enjoy both the preparation and the sequence of eating it.

Where the everyday becomes something special
In Fukuoka, mentaiko is more than a souvenir. It is an everyday staple found in many household refrigerators. At Zen, this familiar local food is brought together with ingredients from across Kyushu and the techniques of traditional Japanese cuisine, transforming it into a refined breakfast experience enjoyed beside a garden in the soft morning light.

This beautifully composed taste of everyday Hakata is equally suited to a morning during a journey or a leisurely day off that begins with something genuinely delicious.

Executive Chef Daishiro Abe is originally from Usa, Oita Prefecture.
