{"id":71739,"date":"2016-03-22T11:09:16","date_gmt":"2016-03-22T02:09:16","guid":{"rendered":"http:\/\/www.fukuoka-now.com\/?p=71652"},"modified":"2016-04-01T00:28:40","modified_gmt":"2016-03-31T15:28:40","slug":"shochu-time-report-shochu-101-christopher-pellegrini","status":"publish","type":"post","link":"https:\/\/www.fukuoka-now.com\/en\/shochu-time-report-shochu-101-christopher-pellegrini\/","title":{"rendered":"Shochu Time Report &#8211; Shochu 101 with Christopher Pellegrini"},"content":{"rendered":"<p>On Mar. 23, 2016, Fukuoka\u2019s \u201c<em>shochu otaku<\/em>\u201d (\u201c<em>shochu<\/em> nerds\u201d, the shochu equivalent of \u201cbeer freaks\u201d) gathered at Buzz Live Hall to hear Christopher Pellegrini, the author of The Shochu Handbook and a leading international expert on <em>shochu<\/em> and <em>awamori<\/em>, give a talk in both English and Japanese. <\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/www.fukuoka-now.com\/wp-content\/uploads\/2016\/03\/shochu-time-mar-2016-001-e1459150914897.jpg?resize=640%2C480&#038;ssl=1\" alt=\"shochu time mar 2016 001\" width=\"640\" height=\"480\" class=\"alignnone size-full wp-image-71654\" \/><\/p>\n<p>The <em>shochu<\/em> was flowing as the attendees made full use of the unlimited tasting bar, prepping their tastebuds for the coming talk. The organisers had thoughtfully provided a range of snacks so that patrons could line their stomachs and thus soften the blow of this 50-60 proof drink. As the <em>shochu<\/em>-lovers mingled, you heard expressions like \u201cno <em>shochu<\/em>, no life\u201d and \u201c<em>shochu<\/em> style, <em>shochu<\/em> smile\u201d being laughingly bandied about. <em>Shochu<\/em> clearly attracts some dedicated followers! <\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/www.fukuoka-now.com\/wp-content\/uploads\/2016\/03\/shochu-time-mar-2016-002-e1459150925138.jpg?resize=640%2C480&#038;ssl=1\" alt=\"shochu time mar 2016 002\" width=\"640\" height=\"480\" class=\"alignnone size-full wp-image-71655\" \/><\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/www.fukuoka-now.com\/wp-content\/uploads\/2016\/03\/shochu-time-mar-2016-003-e1459150937370.jpg?resize=640%2C480&#038;ssl=1\" alt=\"shochu time mar 2016 003\" width=\"640\" height=\"480\" class=\"alignnone size-full wp-image-71656\" \/><\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/www.fukuoka-now.com\/wp-content\/uploads\/2016\/03\/shochu-time-mar-2016-004-e1459150945274.jpg?resize=640%2C480&#038;ssl=1\" alt=\"shochu time mar 2016 004\" width=\"640\" height=\"480\" class=\"alignnone size-full wp-image-71657\" \/><\/p>\n<p>When Christopher got up to speak, his passion for <em>shochu<\/em> was as clear as the spirit itself. Back in his native Vermont, Christopher was an ardent beer brewer, and entered the world of professional beer brewing before he was even old enough to legally drink alcohol. This zeal and experience mean that he can truly appreciate the care and almost excruciatingly intense attention to detail the <em>shochu<\/em> distilleries apply to the brewing process. Christopher studied hard to pass the <em>shochu<\/em> sommelier certification exam offered by the Sake Service Institution; an exam made all the harder by the fact that there was almost no English information available on <em>shochu<\/em> at the time (there was certainly no Wikipedia page on the subject). Now he\u2019s one of the few licensed, non-Japanese sommeliers living in <em>shochu<\/em>\u2019s native land, with a book under his belt, two more in the offing, and a busy schedule of events around the world at which he presents <em>shochu<\/em> (from art shows to gigs). He\u2019s also in the process of creating a website, which will help consumers learn about <em>shochu<\/em> and producers about distribution potential (the basic site is already online: shochu.pro). <\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/www.fukuoka-now.com\/wp-content\/uploads\/2016\/03\/shochu-time-mar-2016-005-e1459150954544.jpg?resize=640%2C480&#038;ssl=1\" alt=\"shochu time mar 2016 005\" width=\"640\" height=\"480\" class=\"alignnone size-full wp-image-71658\" \/><\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/www.fukuoka-now.com\/wp-content\/uploads\/2016\/03\/shochu-time-mar-2016-006-e1459150964160.jpg?resize=640%2C480&#038;ssl=1\" alt=\"shochu time mar 2016 006\" width=\"640\" height=\"480\" class=\"alignnone size-full wp-image-71659\" \/><\/p>\n<p>Christopher\u2019s ambition is to put the word \u201c<em>shochu<\/em>\u201d in everyone\u2019s heads, much like \u201cwine\u201d or \u201cbeer\u201d. As he points out, there are many advantages to <em>shochu<\/em>: it\u2019s very low in calories, it can be paired with pretty much any food, and it can be served a number of ways (including with water, which is very unusual for a spirit). But <em>shochu<\/em> is not just versatile, it is varied: from barley to tomato to pepper, the list of officially recognised raw ingredients for <em>shochu<\/em> is huge. And even within a certain category of <em>shochu<\/em>, such as barley, you\u2019ll find different regional types. The tiny Iki Island, just off Nagasaki, has seven barley <em>shochu<\/em> breweries! <\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/www.fukuoka-now.com\/wp-content\/uploads\/2016\/03\/shochu-time-mar-2016-007-e1459150975649.jpg?resize=640%2C480&#038;ssl=1\" alt=\"shochu time mar 2016 007\" width=\"640\" height=\"480\" class=\"alignnone size-full wp-image-71660\" \/><\/p>\n<p>According to all who attended (though, being <em>shochu<\/em>-lovers at a <em>shochu<\/em>-lover meet-up, they may be a little biased) <em>shochu<\/em> is a social drink, so once the talk was over there was time for networking and, of course, more <em>shochu<\/em> tasting.
