What seems normal here, like skewers of pork belly (Wait? That&#8217;s not chicken!) and chopped cabbage with a vinegary sauce, are actually hallmarks of the Hakata-style. Another famous local skewer is the ever-crispy <em>torikawa<\/em> (chicken skin). These skewers use the skin of the chicken neck, one chicken per skewer, because it is thin and lean. The best place in town to get <em>torikawa<\/em> is Kawaya, which has two shops in the city. When you walk in you will see a mountain of the painstakingly crafted skewers next to the counter\u2014proper slow-roasting takes up to six days! \u2014but this quickly dwindles as customers order them by the dozens. The slow-roasting removes the fat while keeping the flavor in. (Spice-lovers can add crushed red pepper.)
