He loved Fukuoka so much he didn&#8217;t want to leave, and found himself a job at an established German-style sausage and meat shop in Fukuoka. Mirko has brought even more authenticity to the shop including techniques, the introduction of meat platters, and their new eat-in cafe. As a butcher, Mirko works with blades all day and then even after work he finds peace and relaxation through the practice of iaido (Japanese swordsmanship). Perfecting the movements of iaido serves as a kind of meditation for him.
