These chunky shoots are at their best in April (the beginning of spring), and Kyushu is lucky enough to be home to one of the country\u2019s premium bamboo shoot-producing regions: Ouma, Kokura-minami-ku, Kitakyushu City. The bamboo shoots from here are used by high-end restaurants all over Japan! But don\u2019t just pick some up at the supermarket &#8211; take a day trip and go bamboo shoot digging! Tenacious <em>takenoko<\/em> are as fun to dig as they are delicious to eat.
