The secret behind the perfectly crisp, aromatic tempura is the <em>kaya<\/em> (Japanese nutmeg-yew) seed oil &#8211; long viewed as the pinnacle of cooking oils. A true rarity in Japan, <em>kaya<\/em> seed oil makes for an incredibly light fry.
