Although the Japanese love their homegrown marbled beef, red meat and dry-aged beef have been making inroads in Japan. Dry-aging, which requires carefully controlled temperature and relative humidity, yields tender and highly flavorful meat, with a totally different aroma. Golden Beef also has a standard <em>yakiniku<\/em> menu so you can do your own taste test. With nearly 70 wines in the cellar, you\u2019re sure to find the perfect match for your dinner.
