Ibushiza


Run by yakitori veteran Tsukasa Ito, Ibushiza uses high-grade binchotan charcoal to grill its skewers. In true Fukuoka style, your meal starts with a plate of cabbage lightly seasoned with a vinegary sauce. The roughly 20 skewers include tsukune(chicken meatballs), negima (chicken thigh and welsh onion), and sasami (fresh chicken tenderloin), all flavored with natural salt. For spice, add shichimi as you like. Another popular item is the pancetta-wrapped cherry tomatoes coated in basil sauce. A good finisher is the pork miso grilled rice ball wrapped in a shiso leaf.
