Moon Light Noodle


Moon Light Noodle quietly opened in the basement of a building in the Kamikawabata Shopping Arcade in late April, and in just three months, it has grabbed the attention of both local ramen fans and foreign tourists alike. None of the dishes use pork bone broth. Instead, you can choose from varieties of six soup, including soy, salt, dried baby sardines, and spicy mala sauce. We recommend the soy or salt, which use a broth made by boiling whole chickens and chicken neck bones for eight hours. Before you dig in, you will notice the wheaty aroma of the homemade noodles, which have a hard bite and smooth mouthfeel. The noodles are boiled for different lengths of time depending on the type of soup to create just the right flavor combination. The roast pork, made by broiling Japanese pork loin and breast meat on low heat, is juicy and delicious. The vending machine has photos with English, so ordering is a breeze. Note: only open from 7:30 am until 3 pm!
