天神から程近くにある警固で居酒屋を7年間経営していたマシューことマット。彼はある時、お店で出していたデザートで大きなビジネスができるという可能性に気づいたという。早速、居酒屋として使っていた店舗を、その可能性を秘めたデザート『チーズケーキ』を製造・販売するカフェへと改装し事業に乗り出した彼の想いは熱い。ちなみに、アメリカ版お袋の味の代表格、チーズケーキのブレリー家版は、祖母から伝わるレシピを使って作る伝統的なニューヨーク風チーズケーキ。サクサクの全麦クラッカーと、程よい甘さと酸味がマッチしたクリーミーなチーズ、そして全体に薄らっと覆わるホワイトチョコのような風味のサワークリームのコンビネーションが絶妙の逸品。毎週水・木・金曜日の13時から19時まではカフェにてケーキ作りに没頭しているマット。3月15日から25日の間は、福岡天神大丸でも販売が行われる。
