仕事と研究を通して鍛練された彼のキャリアが、目の前の美味しそうなソーセージの中にぎっしり詰まっているかのように見えたミルコは、断ることなど考えずにそのチャンスにかぶりついた。それが、彼が日本に来た理由だ。
初めて訪れた福岡をとても気に入った彼は、ドイツ流のソーセージと肉を取り扱うお店での働き口を、自分で見つけて今に至っているのだ。
ミルコは、その店で既に確立されていたドイツ流の手法に加えて、技術だけでなく、肉やソーセージを盛り合わせる”プラッター”、イートインカフェを店内に作ったりと、新風を吹き込みながら、職人としての日々を過ごしている。
肉職人として働くときは常に包丁を携え、仕事を終えると日本刀を用いる武道「居合道」の練習で精神統一を図る。居合道の所作を完璧にこなすことは、彼にとって思索のひとつに繋がるのだそう。
