New Itoshima Dashi

A new dashi made from locally sourced Itoshima madai (red sea bream) has been released. The fish processing company Yamasue worked on the project in collaboration with students of Hakata Girls High School. Itoshima City is known for recording the biggest haul of red bream in Japan. The dashi, which was named “Dashi Soup Tai”, is made without preservatives and can be stored at either room temperature or in a freezer. It comes in 220 ml plastic bottles which will retail at ¥864.
