Shuichi Hirakawa
For a man just embarking on his thirties, Hirakawa has already accumulated a wealth of experience. In pursuit of his dream of becoming a log house builder, he headed off to Canada, only to return a few years later as a sushi chef – things don’t always go according to plan! After seven years of cooking professionally, his interest in one of the kitchen’s most basic ingredients, salt, has since become a passion. Now in Itoshima, he makes natural sea salt using old-fashioned techniques, and most importantly, soul.
