Tamamizu Sake Brewery, founded in 1878, continues to use traditional wooden presses. Its president, Shigeru Yamashita, expressed pride in the recognition, noting that while production has declined to one-fifth of its 1960s peak, he hopes the UNESCO status will draw more attention both domestically and internationally.
