Fukuoka City has announced the 28 yatai (mobile food stalls) that were were selected out of a field of 108 applicants. The 28 yatai operators will choose their stall’s location (the operator with the highest marks in the selection process get to choose first) and open for business in April. The head of the selection committee, a Fukuoka university professor said that the panel had evaluated each application in regards to how the yatai will will bring new elements to the existing yatai culture.
