Ippudo Rolls Out Plant-Based Mazemen Nationwide

Chikara no Moto Holdings, the company behind Ippudo, has introduced a fully plant-based mazemen at all 131 of its ramen shops across Japan. The dish, priced at ¥1,000, features soy-based meat miso and egg-free fresh pasta. The noodles are topped with a blend of cabbage, bean sprouts, and pickled paprika for added flavor and texture. To enhance the taste, the broth is made from a mix of mushroom paste and plant-based milk. This is the first time Ippudo has rolled out a fully plant-based dish across all its domestic outlets, and it will be available in limited quantities to commemorate the company’s 39th anniversary.
