Sushi Chefs Teach High School Students in Kitakyushu

Kitakyushu, known for its rich sushi culture, saw local sushi chefs conducting an outreach class for high school students. This initiative aims to promote sushi as a new tourist attraction and pass on traditional techniques to the younger generation. Master chef Setsuo Funahashi from the Michelin two-star restaurant Edomae Sushi Nikaku demonstrated the “Hontegaeshi” technique to students at Higashi Chikushi Gakuen High School. Kitakyushu’s advantageous location, surrounded by three seas, provides an abundant supply of sushi ingredients. Funahashi emphasized the importance of reviving and preserving sushi-making skills. Students expressed their admiration and newfound understanding of the intricacies involved in sushi preparation.
