A group of students at Kyushu Sangyo University is working on a project to develop udon noodles for the Vietnamese market. In collaboration with Hitoyoshi Udon, which opened its first shop in Ho Chi Minh in 2017, the group developed four new dishes that use Kyushu-sourced ingredients such as yuzu citrus and yam to serve in Ho Chi Minh. On December 4, the Consul General of the Socialist Republic of Vietnam in Fukuoka, Vu Binh, as well as Consul, Nguyen Van Loi, were invited to try the unique udon dishes.
