Founded in 1855, Shiraito Shuzo, a long-established brewery in Itoshima, holds its kura-biraki (brewery opening) in February and April. The brewery is known for its traditional “Haneki-shibori” pressing method, passed down since the Edo period, which uses a lever system to slowly press sake by hand. This technique is valued for producing a softer, more nuanced flavor than mechanical pressing.
Its flagship label is Tanaka Rokujugo, a junmai sake milled to 65%, with a balanced profile that has earned a loyal following in Japan and overseas. During the brewery opening, visitors can purchase and sample limited-edition sake, including freshly pressed varieties available only at this time of year. Food stalls featuring local specialties such as Itoshima oysters and mentaiko add to the festive atmosphere. A free shuttle bus operates from Chikuzen-Maebaru Station (South Exit).
