Gamba

Gamba means shrimp in Spanish, and it’s the name of a brand new and unique tacos stand and bar in Minato, Fukuoka.

There’s a small outdoor terrace with a few tables, but otherwise, customers stand around a u-shaped counter with the kitchen in the center. Dead center is a large round griddle on which tasty tacos, burritos, and more are grilled to perfection. Operated by the same folks that ran the legendary Spanish cafe Rossa Rossa on Keyaki-dori, everything about this place is the work of professionals and maybe years honed kitchen wizardry.

The Birria Tacos, not commonly available in Japan but recently gained popularity from food trucks in Hawaii and California, are on offer. Handmade corn tortillas filled with ingredients are fried and grilled in chili oil, then dipped in birria, a meat stew simmered in spices.

Even the nachos, which many consider a snack, are more of a proper dish made with avocado, olives, cheese, and shrimp. Take-out is available too, of course.
