On May 14, 2022, a French pastry store opened just off Keyaki-dori. It offers a variety of traditional confections, regional sweets, bread, and conferees, focusing on handmade French baked sweets made by owner-chef Ichiriki Nishijima.
The shop’s name comes from his nickname by his colleagues when he worked at a French patisserie.
Chef Nishijima studied at Ecole Tsuji and worked at patisseries in Tokyo, France, and elsewhere. His signature is galette praline, which pays homage to his days working at a patisserie in Lyon. It is a French sugar candy coated with almonds and topped with brioche made with fermented butter, a rare treat in Japan.
The pink-colored praline rosé (pink meaning rose) is a specialty of Lyon and the combination of the crispy texture and fluffy brioche.
Only a limited menu will be available on the first two days (May 14-15), and a fuller lineup will be available from May 18.
