Tucked away on a back street just a five-minute walk from Yakuin Station sits one of Fukuoka’s oldest pizza restaurants. The main attraction here is the Neapolitan pizzas baked in a wood-fired stone oven. The crust, made from an original blend of Italian and Japanese flours, is kneaded by veteran chefs who can “feel” when it’s ready, all while making adjustments for temperature and humidity. They also know exactly where to place the pizza inside the oven, which can get as hot as 400° C, for the best results. In just one minute, the edges of the pizza swell, making for a perfect crunchy-on-the-outside, soft-on-the-inside texture. Before your pizza arrives, you can enjoy appetizers made with seasonal veggies and oven-grilled chicken or spare ribs. The homemade gelato and dolce also keep the regulars coming back for more.
