On November 1 Fukuoka City announced that they have received 107 applications to open new yatai (food stalls). After the applications have been reviewed, entrants will be interviewed and judged based on a number factors such as: the proposed the menu, tourist friendliness and contribution to the city’s appeal. The selection committee will choose the final candidates at the end of December. The new yatai will open for business in the spring 2017, with licenses valid for 10 years.
