Ippudo’s new flagship store, “Daimyo Honten Annex,” will open on December 6 in the “Ramen Runway” area of Fukuoka Airport’s domestic terminal, known as a hub for renowned ramen brands. This is Ippudo’s 14th store in Fukuoka Prefecture and the second inside a Japanese airport. Timed with the company’s 40th anniversary, the store represents a return to its origins while incorporating innovative culinary concepts.
A standout feature of the menu is the use of Itoshima-sourced ingredients to highlight local flavors. The “Itoshima” ramen, exclusive to this location, incorporates fresh regional produce and seafood, emphasizing the connection to Fukuoka’s agricultural and culinary traditions. The menu also includes recreated versions of the original “White” and “Red” tonkotsu ramen recipes, the “Hakata Matsuri Ju” bento featuring Hakata specialties like mentaiko and karashi takana, and the limited-time “Rooibos Tea Tonkotsu” ramen.
The store design includes an open kitchen for an engaging dining experience and decor reflecting Ippudo’s history and Hakata’s cultural heritage. Amenities such as accessible seating, luggage space, and a relaxed jazz soundtrack cater to travelers. From December 6 to December 11, loyalty points earned through the official Ippudo app will be doubled for purchases at this location.
