The production of irikio, or parched sardines, has begun in Itoshima, the only site were iriko is made in Fukuoka Prefecture. The fish actually used is known as the Japanese anchovy in English, and they are pumped directly from the fishing boats to the processing plant to maintain freshness. Production will continue to the end of the year, by which time 25 tons will have been produced. That is the equivalent of a year’s worth of sales. Source: Nishinippon Shimbun
