Two local master ramen chefs have joined forces for the Fukuoka Ramen Show. Osamu Shiroto, owner of the popular Najimatei restaurant in Higashi-ku, and Shigemi Kawahara, owner of the 100-shop Ippudo chain, will serve up a “collaborative” ramen based on the Nagahama Champon from Nagahama Ichiban, a now-shuttered ramen shop where both of chefs learned their trade over two decades ago. The new dish is a combination of Najimatei’s rich tonkotsu soup and Ippudo’s al dente noodles, and the base sauce is a blend of both shop’s recipes.
