Founded in the tonkotsu (pork bone broth) ramen capital of Fukuoka, Ichiran is a popular ramen chain that now has outlets throughout Japan as well as in the United States, Taiwan and Hong Kong. Ichiran is known for its soup, a unique blend of original spicy red sauce and tonkotsu broth. To order, use the order slip provided to indicate your preferences in seven areas, including the concentration of the soup and the hardness of the noodles. Another aspect unique to Ichiran is seating. The counter features partitioned booths where you can focus on eating your ramen in private. Ichiran has many shops throughout Fukuoka, but the Head Shop offers two seating styles: its trademark private booths on the second floor and the Ichiran Yatai—table seating perfect for families or other groups—on the first floor.
