This fall, hot spring resort Oncri took over the 60-year-old Japanese restaurant Watahan in Shirogane, adding high ceilings to the dining room to make it more open. The restaurant offers courses that combine traditional French cuisine with modern trends. You can enjoy watching the chefs cook in the open kitchen while you wait. Chef Daisuke Yoshitake, a native of Fukuoka, carefully selects local ingredients, including high-quality Saga Beef and long tooth grouper, a popular winter fish in northern Kyushu, to create elegant courses served on Arita ware from Saga.
