Plant-based Cafe NICE



With a heightened focus on the environment and ingredients, people are now more discerning about what they eat. Plant-based Cafe Nice opened in March, and as its name implies, it uses no meat, fish, eggs or dairy products. Owner Yusuke Yokoyama decided to offer plant-based dishes because he wanted to create a place where anyone could come and enjoy a meal with their friends, not because he wanted to create an exclusive atmosphere only for people with certain preferences, such as people with allergies, vegetarians or the health-conscious. But the main reason he opened the cafe was the fact that when he first encountered vegan fare, it was—first and foremost—delicious. Most of the menu items, including the seasonings, are handmade on the premises, using original recipes with a good balance of spices. The chickpea-based burgers are packed with veggies from Itoshima, while the vegetable lasagna uses nuts to create its aroma. Meanwhile, the spicy and filling chickpea falafel has also proven to be a popular take-out option. His made-to-order plant-based cold desserts, which he has dubbed Nice Cream, are made from soy milk, fruit and spices and include Nice originals you won’t find anywhere else, like the turmeric and mango.
