Congratulations to Kapono, Okmi and Chinatsu on the opening of “Kapono’s” in Maizuru 1-chome, just off of Oyafuko-dori. Head Chef Kapono Boynton has worked in several kitchens here in Fukuoka since 2007, (and before that, at both Benihana and Tanaka of Tokyo in Hawaii.) And now, finally, he has a kitchen of his own!
We dropped by to check out this colourful and cozy spot which only opened on April 5th. There’s three tables in the main hall, a counter bar and a private “party room” in the back. As you’d expect, mellow Hawaiian music and decorations from the Islands fill the brightly painted interior.
The appetizer (included in the ¥380 table charge) is a beautifully presented plate of poke, (raw yellowfin tuna, avocado, fish eggs, seaweed, radish) served on a leaf. Next, we tried the Tropical Island Salad (¥950), Soft Shell Honey & Pecan Shrimp (¥1,100), Crispy BBQ Chicken (¥780), and Kapono’s Original Karage (planned as an upcoming lunch menu). Though we didn’t get to try it, he is very proud of his Beef Stew made using his grandmother’s recipe.
The restaurant is currently only open for dinner, but Kapono says he hopes to begin a lunchtime service soon as well as a once a month event with live entertainment and a special food menu.
