Fukuoka-based Hakata Ikkousha ramen is proving popular in Guangzhou, Guangdong province, China. The shop sources most of its ingredients locally while maintaining the same flavor and level of service as in Fukuoka. Ikkousha’s popularity stems from the fact that customers can adjust toppings according to their tastes. A bowl of Ikkousha’s trademark tonkotsu ramen costs 38 yuan (¥620), and many customers also order karaage fried chicken and other side dishes. The average customer spend is 58~59 yuan (¥950), or slightly higher than that in Japan. Ikkousha followed up its Hong Kong shop with the shop in nearby Guangzhou last May and is preparing to open its third outlet next month. Source: Nishinippon Shimbun 7/25
