This July, Las Vegas, a new gyoza restaurant, hung out its shingle in the gyoza mecca of Fukuoka. Owner Kazuma Kawase, who’s made a point to try gyoza from all over Japan and the world, focuses on freshness. He uses Japanese pork thigh and only wraps the gyoza after you order them. He’s also the owner-chef at the popular bistro Yorgo, so foodies are already making their way to Las Vegas. For ¥50 off, you can sit at the counter and wrap your own gyoza. The refreshing grapefruit and lemon sours, which use fresh juice made daily on site, make for a perfect pairing.
