After studying French cuisine, Fukuoka native Hideyuki Kaneda traveled the world and even worked at award-winning Gaggan in Thailand. He trained for five years at Ryugin in Tokyo before opening Ao last year. At Ao, the dishes are an innovative Japanese cuisine with hints of French technique. The only item is the ¥15,000 course, which features unique creations born from a combination of experience, expertise, and refined aesthetic. Take the appetizer. Pop it in your mouth and you’ll find it’s an exquisite mix of pig’s feet, truffles, and foie gras. The wonder never ends until you’re done.
