With jazz in the background and comfortable counter seating, the atmosphere at Kagura feels more like a bar. The shop only uses carefully selected Kuroge Wagyu beef raised in Kyushu, and its lean cuts are especially popular. The meat is cut after you order to ensure the flavor stays locked in. Choose from two sauces, a lemon sauce and a soy-based sauce flavored with scallop extract and wine, or enjoy the leaner cuts with one of the table seasonings: homemade hot pepper sauce, Mongolian rock salt, plum salt or smoked salt. The chef’s choice four-variety platter, which changes daily, is a good place to start if you’re not well versed in your meat cuts.
