A good burger is reason enough to go out for lunch. At Wolfgang’s Steakhouse Fukuoka, there’s an extra reason to go now: a limited menu featuring Kumamoto’s akaushi beef, available only at the Fukuoka restaurant. We stopped by the Grand Hyatt Fukuoka to try the burger and roast beef sandwich, and both were excellent.
The restaurant’s Kumamoto Fair runs until November 15, 2026, showcasing ingredients from around the prefecture, including Amakusa kuruma prawns and Amakusa Daio chicken. The main attraction for us was the akaushi: Kumamoto’s red beef, known for its lean meat, moderate marbling and full flavour. It’s a different side of wagyu from the heavily marbled beef many people associate with the name.
Our lunch choices were the Signature Burger and Akaushi Roast Beef Sandwich. Both are available à la carte at lunchtime, at the bar counter or a table. It’s an easy way to enjoy Wolfgang’s over a casual lunch, whether you’re on your own or meeting someone. And for fans visiting from elsewhere, this menu is a reason to seek out the Fukuoka branch.
Akaushi on the grill
The Signature Burger uses Kumamoto akaushi shoulder, cooked with the high heat Wolfgang’s is known for. Ours was served medium rare, with a nicely seared surface and a tender centre.
What comes through is the flavour of the beef. Akaushi’s lean meat gives the burger a satisfying, beefy character, with that seared exterior adding to each bite. Pick it up and get stuck in: this is a steakhouse lunch you can eat with your hands.
Akaushi makes an excellent roast beef sandwich
The Akaushi Roast Beef Sandwich shows another side of the same beef. Slow cooking at a low temperature brings out its flavour and tenderness, and akaushi turns out to be particularly well suited to roast beef.
It’s a generous sandwich, but it doesn’t feel heavy. The meat is easy to bite through, too, so there’s every reason to put down the cutlery and pick this one up as well.
Settle in at the bar on your own or take a table with a friend: either dish makes a very good excuse for a longer lunch. There’s also a purpose behind the menu. A portion of sales from the Kumamoto Fair will be donated to support recovery and rebuilding in Kumamoto following the earthquake.
